      <image:caption>Yesterday I got home from a short road trip and whipped up a quick dhal for dinner. This recipe is super easy and can be on your Table in 30 minutes (prep &amp; cooking time). Most ingredients will be found as pantry staples so no need to go out and buy any unnecessary ingredients you won’t ever use again. 2 cups of butternut pumpkin chopped into cubes 1 medium sized carrot chopped into cubes 1 tomato diced 1 cup red lentils rinsed and strained 1 yellow onion diced 2 cloves of garlic diced 7 florets of cauliflower separated A small handful of chopped flat leaf parsley Olive oil as needed to sauté onion and garlic 3 cups vegetable stock 1 can coconut milk 1/2 lemon squeezed for juice SPICES: 2 tsp turmeric 1 tsp cumin 1 tsp ground cinnamon 2 tsp curry powder Garnishes: 1/4 handful of chopped parsley 1/4 handful of chopped coriander 1 dollop of Greek yogurt Add olive oil, onion and garlic to a hot pot. Once onion starts to turn translucent, add tomato, spices and parsley and stir through. Add in vegetable stock and lentils. Let simmer on a medium head and stir occasionally for about 10 minutes. Add in pumpkin and carrot, stir through occasionally. Add in coconut milk and lemon juice. Stir through and let simmer until most of the liquid is absorbed. Once lentils have almost completely cooked through, add in cauliflower and simmer until softened. Serve with garnishes &amp; enjoy</image:caption>

      <image:caption>When you come home and there are three blue swimmer crabs waiting to be cooked… let me tell you this recipe is a crowd pleaser  Feeds 3 3 blue swimmer crabs 2 lemons (cut in quarters then squeezed for juice) 1 lemon (cut in quarters, serve a wedge on the side) 3 Large tomatoes (cut into bite size chunks) 1/2 bunch flat leaf parsley (chopped finely) 250g pasta Extra virgin olive oil as needed 1 clove garlic finely diced If freshly caught, Place crabs in the freezer for 30 minutes to fall asleep. If crabs are not alive proceed to the next step. Over a stove in a large pot, bring enough water which will cover your crabs to the boil. Add in your crab, let boil for 6 minutes. They will start to turn orange (and start to float when they are almost cooked) Fill your sink with cold water and place crabs in the water to cool for about 5 minutes. Remove your crabs from the water, clean your crab and remove the meat. Set aside. In a pot, bring 1.5L water to the boil, add in your pasta to cook. Once your pasta is almost cooked, over a medium heat, generously drizzle olive oil into a large saucepan Add your garlic and tomato to the saucepan.       <image:caption>I woke up this morning planning on diving into assignments but was overcome by the urge to make Anzac cookies! These are so easy and fast to make and are full of pantry staples (no need to go out and buy 1000 ingredients you’ll never use again). INGREDIENTS 1 cup wholemeal flour 1 cup rolled oats 1/2 cup desiccated coconut 1 tsp bi carb soda 1 tsp vanilla extract 2 tbsp hemp seeds (optional but highly recommended for that extra nutrients) 80ml (or 1/4 cup + 1/8 cup) maple syrup 150 g olive oil spread If you have a sweet tooth, add 1 tbsp honey. Anzac cookies are usually pretty loaded with sugar and golden syrup. Maple is a little more subtle. METHOD Preheat oven to 170 degrees Celsius Line a baking tray with baking paper Add all dry ingredients to a mixing bowl (make sure you sift the flour to remove any lumps. Pour the whole meal flour residue that’s left in your sifter back into the mixing bowl). In a medium pot, bring the stove to a medium heat. Add the olive oil spread to the pot to melt. Also pour in the maple syrup and vanilla essence (and honey if you have a sweet tooth). Stir through. Add bicarb soda. This will foam up so make sure you continuously stir. Once all wet ingredients in the pot are mixed through, pour your liquid into your mixing bowl with your dry ingredients. Stir through to combine your biscuit dough. Using a tablespoon, scoop your biscuit dough into one hand, pat/ roll your hands together with the dough to form cookie shapes. Place your cookies on your baking tray.       <image:caption>This was a “whatever was available in the house throw together” kind of recipe which turned out absolutely deeeelish! There aren’t many ingredients so it’s a cheap, easy and tasty recipe to throw together  1/2 pumpkin (I used butternut) 1 small brown onion (diced) 4cm x 3cm cube ginger (skin removed) Sprinkle cinnamon (optional) Small handful chopped parsley Feta (as required for garnish) Sprinkle of pumpkin seeds Sprinkle of sunflower seeds 2 cups vegetable stock Bring your kettle to the boil. Remove skin from your pumpkin and chop into small cubes. Dice your onion. Drizzle olive oil in a hot pot, Add onion and fry off until translucent. Add in your pumpkin cubes, stir occasionally for a minute. Grate your ginger into your soup. Add in your vegetable stock. Add in boiling water (you want the water to be almost completely covering your pumpkin cubes). Let simmer for 20 minutes or until pumpkin is soft. Set aside until cooled down a bit, with a hand pulser- blitz until a smooth creamy consistency is formed. Scoop your soup into bowls, top with crumbled feta, chopped parsley and seeds.</image:caption>
